Aalo Matar
Ingredients:
Potatoes
4-5 medium sized cut into half
Green peas
2 cups
Chopped
onion 2 medium size chopped
Tomato 2
medium size chopped
Salt to
taste
Turmeric ¼
tsp
Red chili
powder 1 tbsp (or to taste)
Coriander
powder ½ tbsp
Green
chili 4-5
Coriander
leaves for garnish 2 tbsp
Method:
1.
Heat oil and add chopped onion, cook
until golden brown.
2.
Now add tomatoes and add all the dry
spices, stir on high flame for a min, cook until soft.
3.
Cook the mixture until fat
separates.
4.
Add the peas, potatoes and sauté
over high heat till the vegetables look glossy.
5.
Add 2 cups of water; bring to a boil
and simmer, for 10-15 minutes. Cover the lid and cook.
6.
Check if the vegetables are soft. Place
green chilies and cover the lid till they are soft.
7.
Cook until the vegetables are dry or leave a
little bit of curry as you like.
8.
Serve hot, garnished with the
coriander leaves.
