Lauki ki Sabzi (Bottle guard) (01)
Ingredients:
Lauki 1 kg
Onion 2 medium size sliced
Tomato 2 chopped
Tomato 2 chopped
Oil 2-3 tbsp
Coriander powder ½ tbsp
Red chili powder 1 ½ tbsp
Coriander powder ½ tbsp
Red chili powder 1 ½ tbsp
Turmeric powder ½ teaspoon
Salt to taste
Chopped coriander leaves for garnishing
Fresh lemon or lime juice (optional)

Method:
1. Peel the lauki and cut into slices.
2. Heat the oil in a pan, add onion and sauté,
cook till the onion changes color to golden brown.
3. Now add chopped tomatoes, salt and spices.
4. Mix well and cook on medium flame until oil
begins to separate and tomatoes are softened.
5. Add sliced lauki and stir for 2 minutes.
6. Do not add water, as lauki leaves its own
water while cooking.
7. Cover the pan; simmer the flame and leave to cook,
till the gourd turns soft.
8. Stir occasionally and cook till the vegetable
is semi-dry.
9. Garnish with chopped coriander.
Serve with chapatti, Nan, or serve it with
dhai or garnish it with lemon as per your taste.
