Lauki ki Sabzi (Bottle guard) (02)
Ingredients:
Lauki 1 kg
Onion 2 medium sizes sliced
Oil 2-3 tbsp
Whole Garam masala (zeera, kali mirch, long, daar chini, bari elaichi)
1 tbsp
Coriander powder ½ tbsp
Red chili powder 1 ½ tbsp
Coriander powder ½ tbsp
Red chili powder 1 ½ tbsp
Turmeric powder ½ teaspoon
Salt to taste
Green chilies 4-5
Chopped coriander leaves for garnishing
Fresh lemon or lime juice (optional)

Method:
- Peel the lauki and cut into
slices.
2. Heat the oil in a pan; add onion and sauté
cook till the onion changes color to golden brown.
3. Now add garam masala and stir for a min on high
flame, add salt and spices.
4. Mix well and cook on medium flame until oil
begins to separate and add sliced lauki and stir for 2 minutes.
5. Do not add water, as lauki leaves its own
water while cooking.
6. Cover the pan; simmer the flame and leave to
cook, till the gourd turns soft.
7. Stir occasionally and cook till the vegetable
is semi-dry.
8. Now add green chilies and cover the lid, cook until
chilies are soft.
9. Garnish with chopped coriander.
Serve with chapatti, Nan, or serve it with
dhai or garnish it with lemon as per your taste.
