Lauki ka Raita
Ingredients:
Lauki
1 kg
Dhai
(Yougurt ½ kg)
Cumin seed ½ tbsp crushed
Salt as per taste
2 tbsp finely chopped Podena (mint)
Green chilies (optional) 1 -2
Red chilli powder ½ tbsp (or as per taste)
For Tarka:
Oil 2 tbsp
Garlic 3 -4 cloves sliced
Whole red chilli 3-4
Cumin seed 1 tbsp
Smoke (Optional):
A piece of coal (Koila)
Method:
1. Boil the lauki till it is soft and cooked.
Now mash the lauki but not very smoothly, keep some chunks of lauki as well.
2. Whip the yogurt and
add the mash lauki into it. Now add all the spices salt, cumin Podena and red chili
powder or green chilies.
3. Heat the oil in a
saucepan on medium high heat.
4. Add the garlic and wait until it start turning
golden, now add cumin seeds. After the cumin seeds crack, add red chilies.
Stir-fry a few seconds.
5. Now add this mixture on the raita you made before
as a tarka.
6. For a new and better taste, heat coal on flame
till it turns red. Now place a piece of Nan or roti on the raita place that hot
coal on it.
7. Drip a few drops of ghee on that hot coal, it will
start smoking cover pan or bowl so that the smoke don’t diffuse in the air.
8. Remove the lid after 5 minutes, serve with Nan
or white chawal.
