Aalo Gobi
Ingredients:
Aaloo
(Potato) 4 -5 medium sizes cut into four half
Gobi
(Cauliflower) 1 large cauliflower cut into small pieces
Onion
2 medium size sliced
Tomato
2 medium size chopped
Red
chili powder 1 tbsp
Coriander
powder 1 tbsp
Turmeric
½ teaspoons
Salt
to taste
Oil
2 tbsp
Green
chilies
Fresh
ginger sliced 2 tbsp
Fresh
coriander chopped 2 tbsp (for garnish)
Method:
- Heat
vegetable oil in a large saucepan.
- Add
the chopped onion and cook until they are golden brown.
- Now
add tomatoes and stir for a min, then add all the spices red chili power,
turmeric, coriander powder, and salt.
- Stir
together and cook until the tomatoes are soft, and the mixture leaves the
oil.
- Add
chopped cauliflower and tomatoes in the mixture and stir for min on high
flame.
- Add
half glass of water, and cover lid cook it on medium flame, and stir occasionally
so that it does not stick to the pan.
- Cook
until the potatoes and cauliflower soften and cooked.
- Now
add sliced ginger and mix, and add whole green chilies and cover the lid until
the chilies get soft (Dum).
- Garnish
it with fresh coriander leaves and serve hot with Nan or roti.
